With Ramadan you must have heard of ‘haleem’. Its origin lies in the popular Arabian dish, known as ‘Harees’. Haleem is a high-calorie dish and also rich in anti-oxidants. Its slow-digesting and fast-burning ingredients provides instant energy. So, for great taste and nutritional benefits make it at your home. Here is a perfect Chicken Haleem Recipe for Iftar.

We’ll be needing-

1 cup wheat, ¼ cup plus 1 tbsp barley, ¼ cup white maash dal, ¼ cup moong dal, ¼ cup masoor dal, ¼ cup basmati rice, 1 cup channa dal, ½ to ¾ cup oil, 2 ½ lbs boneless chicken, 1 ½ cup chicken stock, 1 ½ tablespoon red chili powder, Salt, 3 tablespoons ginger garlic paste, 1 tablespoon coriander powder, 1 ½ teaspoon turmeric powder, 1 ½ large onions sliced for frying

For Garnishing

Lemon wedges, chopped cilantro and green chili, fried onions, julienned ginger, chaat masala, yoghurt and naan.

Method

Wash and soak all seven grains for 6 to 8 hours. In a pan, fry onions till golden-brown, add meat, ginger, garlic, chili powder, turmeric, coriander powder, stock and salt. Cook until korma is tender. Now in a large separate pot, boil pre-soaked grains until tender, approximately for 2 to 2 ½ hours.

The quantity of water depends on the required consistency and thickness of the haleem. Once boiled, put grains in blender and blend roughly. Pour the blended grains back in the pot for cooking.

Mix thoroughly on low to medium flame, stirring constantly. Cook and stir until the correct consistency.  Seal the pot and let steam for a few minutes.  Your perfect Chicken Haleem Recipe for Iftar is ready. Do garnish and serve with a side of naan.

Tips: While cooking Haleem, don’t add lemon juice in it. It can kill the real flavors of the dish. Always add lemon on top of Haleem as a garnish along with some fried onion.
