Iftar meal is often a festive, specially with family on weekend. So, this week we bring rice item for a yummy full plate iftar. It’s called Fattah. This traditional dish is served mostly during Ramadan in Egypt. It packs volumes of flavor with rice and beef. Let’s get started with Egyptian Fattah recipe

Ingredients you will need:

2 kg of red meat in big cubs, 1 big onion, 2 cups white rice, 1 full head of garlic, Salt, 1/2 cup white vinegar, 2 big tomatoes (optional), 1 tbsp Butter/ Ghee, Cardamom, bay leaves, salt, and pepper according to taste

In a deep pot melt butter then stir fry meat cubes until brown. Add the bay leaves,  black pepper and cardamom. Now add onion, garlic, tomato. Mix well together. Pour in hot boiling water to cover. Remove any foam rising at the surface. Cover the pot loosely and let simmer until done. Add salt in the last 5 minutes of cooking. Strain and take the meat out. Save the broth for later.

Traditional Egyptian Fattah

In another pot take butter and oil. When butter is melted add the rice. Stir the rice for 2-3 minutes until well mixed. Now pour the broth water. Season with salt, and bring to a boil. Reduce heat, cover and let it cook for 13-15 minutes.

**You can prepare pita bread meanwhile. As this dish is served traditionally with pita. You can also alternat with naan bread. You will also need white sauce and tomato sauce to serve in final dish for authentic taste.

To assemble Fattah:

Place the toasted pita on the platter then drizzle with about 1 cup of the white sauce. Add the rice and level next. Arrange the meat pieces on top or around the platter. Finish by drizzling  some tomato sauce on top. Pour the remaining white sauce and tomato sauce on bowls and serve on the side.
