One of the holiest nights in the Islamic calendar is right around the corner. It’s a special night that Muslims spend reciting the Holy Quran and praying. There are also many traditions that go way back ages. One of the most memorable of them all is preparing sweets on the evening of Shab-e-Barat. Halwa’s are a favorite for the night. “Gajor er Halwa” is among the most popular so take a look at how to make it.

Gajor er Halwa-

Ingredients:

1 kg carrots (grated)

2 and a half cups of boiled milk

Sugar according to your taste

½ tsp cardamon power

3 tbsp butter

A few almonds

A few pistachios

A few cashews

Method:

  • In a pan heat butter and put the grated carrots in it. Cook the carrots in low heat till the rawness of the carrots goes away. You will understand when the smell will change.
  • Then pour in the milk and boil it in low heat till the mixture becomes thick.
  • Add in the sugar when it starts to thicken. And keep stirring the mixture 
  • Then slowly add the cardamom powder for flavor and keep stirring
  • Keep stirring your mixture till the ghee separates that when you know its ready
  • Lastly, add the nuts before serving 

Note that the key to a good halwa is how well you stir it. So keep on stirring for the best results and enjoy!
